CREMA di NOCI -Walnut cream sauce

INGREDIENTS:

1 T EVOO

1 ea MEDIUM SHALLOT

2 ea GARLIC CLOVES

2 Cup HEAVY CREAM

1 Cup chopped WALNUTS

2 Cup grated PECORINO CHEESE

1 T finely chopped TARRAGON

TO TASTE, SALT and PEPPER

METHOD:

Bring 4 cups of heavy salted water to boil then blanching the walnuts for 1 minute. Remove and place on paper towel to dry. Then chop walnuts.

Dice shallots and crush garlic

Heat EVOO in sauce pan over medium heat

Sautee shallots until translucent, then add garlic cooking to light brown

Add heavy cream and walnuts and bring to a simmer

Carefully add to a blender to mix until smooth

Return to sauce pan on low heat and whisk in Pecorino until melted

Season with tarragon, salt, and pepper   

Boil pasta to al dente and mix with sauce
